A classic danish cold potato salad is a stable of any good potluck in the summer. The dish is fresh, full of herbs and quite filling.
This is not so much a recipe as inspiration. I am not adding quantities because it really depend on how strong you like it.
Depending on how many potatoes and your own taste you will need different amounts of ingredients. I like to have enough dressing to have the potatoes slightly covered.
Instead of using mayonnaise I add a bit of creme fraiche (or sour cream) to the dish, which makes it much lighter both in taste and fat content.
It keeps a few days in the fridge.
Cold Potato Salad
Classic danish cold potato salad without any mayonnaise

Ingredients
- Cold boiled potatoes with or without peel
- onion raw and chopped
- Creme fraiche or sour cream
- Any yoghurt product (yogurt, skyr, curds)
Herbs and spices
- garlic
- chives
- mustard
- salt and pepper

Slice the potatoes into one bowl

Mix the other ingredients in another bowl. Keep tasting it as you add a bit of each spice. Add a bit of everything,

Taste and when add some more of the species until you like the taste. Make sure it taste more strongly than you would want to eat it alone - the potatoes will steal a lot of the flavour.

Carefully mix the potatoes with the spice and yoghurt mix

Let it rest for at least one hour
