Icelandic crepes

This is inspired by an Icelandic recipe that we got from my cousin’s dad. Icelandic crepes are so good and they work as waffles as well. It is a recipe I have been making since I was tall enough to reach up and flip the pancakes my self. Though I do not try to flip them in the air ever. They are really easy to make – the only time consuming part is the frying.

Topping ideas

Eat them with any of the following toppings: fruit, strawberry jam, ice cream, sugar, icing sugar, yoghurt, honey, syrup – you name it. You add topping to the middle of the crepe and then roll it up around it.

They even work as savoury pancakes or dinner wraps – just leave out the sugar and add a pinch of salt.

Prep Time 5 minutes
Cook Time 20 minutes
Total Time 25 minutes
Servings 3 people

Ingredients

  • 400 milliliters flour plain flour - or other types of flour - a bit of rye flour works well
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1 egg
  • 50 grams melted butter
  • milk enough that you have batter the texture of yogurt

Instructions

  1. Mix the dry ingredients together.
  2. Whisk in eggs and butter. Add milk until the mix forms a batter.
  3. Bake them on a pan on medium heat. You want to flip them when they start to get dry and form bubbles on the surface.
  4. I normally keep mine warm in the oven while I bake them.
  5. Serve rolled around one of the toppings suggested above.
