Kale salad with pomegranate

A medieval inspired kale salad with pomegranate, which is quick and easy to make. The combination of the lightly bitter kale and the fresh and sweet pomegranate is rather neat.

A simple medieval inspired salad with kale and pomegranate

Ingredients

  • 1/4 pomegranate seeds from
  • 1 big leaf kale
  • 1 apple diced

Vinaigrette

  • 2 tablespoons honey
  • 2 tablespoons vinegar I suggest a light one for looks
  • pepper to taste

Instructions

  1. Seed the pomegranate - you need a few handfuls. Find a video on youtubes on how to do it 🙂
  2. Wash and slice the kale finely
  3. Mix the vinaigrette
  4. Mix the kale and the dressing and add it to the serving bowl
  5. Use the pomegranate as topping
