These small cookies are from a 1980’s Christmas recipe book. By the look of the recipe this is an old recipe, that looks a lot like some renaissance recipes I have seen – like the old peppernuts.
Three Clover Cakes
Tasty Christmas cookies with frosting and renaissance spices.

Ingredients
- 2 egg
- 150 milliliters sugar 120 g
- 400 milliliters wheat flour 250 g
- 1/2 teaspoon cardamom
- 1/2 teaspoon cloves
- 1/2 teaspoon ginger
- 1 tablespoon dates chopped
- 1 tablespoon Hazelnuts chopped
Glazing & toping
- 100 grams icing sugar
- 2 tablespoon rum or rum essense
- 2 dates as decoration
- flaked almonds optional
Instructions

Preheat the oven to 200 C

Mix eggs and sugar together until it is foaming.

Mix the spices and the flour together and add it gently to the egg mixture

Add the chopped dates and nuts.

Shape the dough into 2 cm (1 in) balls and place 3 together to form the clover shape. Press them lightly together.

Bake them at 200 C for 15-20 minutes.

Place the hot cakes on a wire rack over something you don't mind getting dirty.

Mix the glazing of icing sugar and rum.

Glaze the cookies while they are still hot.

Decorate them with the flaked almonds and date bits
