Kale & Orange salad

I had brought some kale today while out shopping because I am in kind of a medieval mindset right now. When I came home and looked at what else I was planing for dinner (barley frumentry and a steak), the traditional dish of “grønlangkål” didn’t really make sense. I decided to just google kale and see what came up. Luckly aarstiderne.com had a good recipe for a salad of kale, so I went with that. This is my version of that salad. It tasted great with the beef steak by the way.

 

Kale & Orange salad

A quick kale and orange salad. Pairs well with beef

Ingredients

  • 5 leafs kale around 5-6 big leafs
  • 2 apples
  • 1 orange pealed
  • nuts optional

Vinaigrette

  • 4 tablespoons juice from an orange
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 3 tablespoons olive oil
  • chili flakes to taste

Instructions

  1. Slice the kale finely - seriously finely
  2. Dice the orange and apple
  3. For the Vinaigrette: Mix soja, orange juice, honey, oil and chili flakes
  4. Mix everything together in a bowl
