Quick tomato bruschetta

Bruschetta is Italian toasted bread with a topping. In this case spiced tomatoes. You can finish it up with a bit of grilled cheese if you really want to but I like it without.

This is one of my favourite summer snacks

You toast the bread, rub it in garlic, drip it with good olive oil and top it with spiced tomatoes and basil. It’s that easy.

Quick tomato bruschetta

Super quick and easy tomato bruschetta - a great afternoon snack or antipasti. It's basically toasted bread with a fresh tomato spread.

Ingredients

  • 1 Slice white bread not toast bread
  • 1 clove of garlic
  • 5 cherry tomatoes
  • olive oil
  • fresh basil if you have it
  • oregano
  • sugar
  • salt and pepper

Instructions

  1. Slice your self a thick slice of bread. Toast it (in oven or on a toaster).
  2. While it is toasting slice tomatoes and peel a clove of garlic.
  3. Once the bread is toasted on both sides, rub the clove of garlic against one side of the bread.
  4. Drip a bit of oil on the bread.
  5. Add the slices of tomatoes and put a bit of all the spices on. Yes sugar sounds strange but tomatoes loves sugar. It needs quite a bit of salt and pepper to be really good but it if you got good tomatoes this is heaven in the summer.
  6. You can also dice the tomatoes and add in the spices and oil. That way you have some of the topping in the fridge.
