Spider muffins

For years by sister and I has hosted Halloween parties for a group of friends. I love to cook for people so I tend to bake party snacks. Among those are these scary spider muffins. They are muffins with raisins, nuts and apples made to look like spiders by adding licorice strings as legs. They only take half an hour to make and they are yummy. I like the mix of soft and crunchy bits that the apples and nut bits provide.

These are based on a Swedish recipe called “St Lucia Muffins” from the page dagensmuffin.se. I can no longer find the recipe online so I decided to share it.

Prep Time 10 minutes

Total Time 30 minutes

Ingredients

  • 400 milliliters wheat flour
  • 200 milliliters sugar
  • 1 teaspoon salt
  • 25 grams melted butter
  • 50 milliliters milk
  • 1 eggs you might need one more if the dough don't want to come together
  • 150 milliliters raisins
  • 1 apple cut into chunks
  • 50 milliliters Hazelnuts or walnuts
  • 1 teaspoon cinnamon
  • licorice strings for legs

Instructions

  1. Preheat the oven to 225 C
  2. Mix flour, sugar, salt and baking powder.
  3. Add the melted butter.
  4. Whip together milk and eggs.
  5. Stir in the flour, eggs and raisins. If the dough isn't coming together, add a an extra egg and adjust with flour.
  6. Grade the apples, chop the nuts and add the sugar and cinnamon. Mix it all into the mix.
  7. Pour the mix into the muffin forms (it's always a good idea to butter them). I find that using silicon forms works much better than paper. Or metal forms lined with paper.
  8. Bake the muffins for about 20 minutes at 220-225 C
  9. Let them cool, remove any paper forms.
  10. Decorate with the licorice strings. You can of course also frost them if you really want to but they are rather sweet already.
